This weekend we were lucky enough to be able to do both of the things we love at once as we had been asked by the mayor of St Neots to come and provide the catering at his annual charity ball. In previous years the mayor had asked various different caterers to provide the food for the ball but this year he told us he was on the lookout for something different and when he heard about Hog Roast St Neots he knew we would be perfect for the job.

In the case of the charity ball, the mayor was looking for the latter and so we worked with his team to design the perfect menu.
The day of the ball quickly came around and we arrived at the town hall bright and early to get started with our food for the day. The first job as always is to get the meat roasting away to give it the maximum amount of time to become beautifully tender and succulent. Tonight’s menu would consist of a traditional whole roasted hog, a couple of beef joints and some Cajun spiced whole roasted chickens. With the meat on to roast, the next job was the accompaniments which would be getting a whole platter to themselves as this was such a special event we weren’t willing to do things by halves…
